Ok, Here we go...
Carbon fiber tanks are stronger, and lighter, but are prone to unravel when they sustain damage. I have found that if it is a carbon fiber it is usually a 4500psi tank.
Steel tanks are heavier, not quite as strong, but are not going to come undone if you chip the coating. They, also seem to be primarily 3000psi tanks.
I wouldn't be able to tell you how much your going to be able to get off of a tank because every gun is different you just have to know your gun, and what it tends to do.
Remotes, do have differences between them, quality of workmanship, whether it's a steel braided line or a coiled hose, whether it has a quick disconnect, or not, and what the hose is rated for.
As for the vest; get a quality one, don't jam a tank that is too big for it into the pocket, and get one you know about, and comes from a reputable source.
Hope this helped if theres anything I missed, or was inaccurate about let me know guys.
I hope you can get a good setup, and good luck at OBK.

I would go w/ a carbon fiber tank,
reason 1: If it is going to be in a vest you won't have to worry about damage.
2. even if you run you tank-on-gun you can get a tank covefr to preotect it for relatively cheap.
3. because you get almost twice the shots from a 4500psi tank over a 3000psi of the same size.

If you go with a remote line, get a slide check. they are beautiful things.
